This Drunken Chicken Zoodle Casserole puts a healthy spin on your favorite take-out dish! With zucchini noodles, Thai spices, and simple healthy ingredients, this paleo-friendly meal has tons of flavor! A delicious, light, high-protein, and low-carb recipe.
Crazy For Zoodles
I love zucchini noodles and all forms of spiralized fruits and veggies, but sometimes they can get a bit boring. That’s why I use them in recipes like my super yummy tuna zoodle casserole, Dandan zoodle cups, or these poblano zoodle noodles. No one could ever get bored with eating such flavorful meals!
So I wanted to try my hand at transforming one of my favorite take-out dishes with nutritious zucchini noodles. Drunken noodles are amazing, but when you make them into chicken zoodle casserole form, they are even more amazing. They’re great to bring as a potluck dish, make for meal prep, or feed the whole family around the table.
Ingredients You’ll Need
This one-pot wonder is simple, cozy, and you can tailor it to your liking. Low-carb, loaded with veggies, protein-packed, and low-sugar! I used, gluten-free tamari, palm sugar, bell peppers, chicken, Thai basil, and birds eye chili peppers with extra jalapeños.
For The Sauce
- Fish sauce & chili garlic paste – Available in most Asian sections at your local grocery store. You can sub sriracha for the chili garlic paste.
- Gluten-free tamari – Feel free to substitute gluten-free soy sauce. Or, for a soy-free alternative, coconut aminos will work, adding a touch of sweetness and a slightly milder taste.
- Dark sugar – Coconut palm sugar, dark brown sugar, or molasses.
- Ginger – I used ground ginger, but you can also use fresh grated ginger root.
- Lime zest – kefir or regular lime zest. Lime juice my be used as a substitute.
- Salt and pepper to taste
- Thai bird’s eye red pepper – If you like spicy, add some finely diced Thai pepper.
Casserole Ingredients
- Chicken – I used thinly sliced boneless and skinless chicken thighs, but you could also use chicken breast.
- Zoodles – Zucchini noodles from 1-2 large zucchini. You can learn all about making zoodles in my spiralized veggie post.
- Onion – Yellow or white onion- chopped.
- Veggies – Use your favorite stir-fry veggies — bell pepper, cabbage, carrots, broccoli, snap peas…etc!
- Tapioca starch or cornstarch – This helps brown the chicken and thicken the sauce.
- Olive oil or sesame oil
- Eggs
- Coconut milk
- Fresh garlic
How To Make Drunken Zoodle Casserole
No, these noodles don’t contain alcohol. The story goes that these were invented by someone who came home drunk, had the munchies, and made a dish with ingredients they had on hand, and thus we have “Drunkard’s Noodles.”
- Preheat oven, prepare a casserole dish, and set aside.
- Dice chicken, pat dry, and coat with cornstarch or tapioca starch.
- Make your zucchini noodles. I used a spiralizer, but you can also cut julienne style. Make sure to drain the zucchini noodles on some paper towels to get rid of excess moisture, or your casserole will end up mushy.
- Whisk together the fish sauce, chili sauce, ginger, tamari, sugar, lime, and a pinch of pepper.
- Brown the chicken in a skillet over medium heat, then add garlic and sauté until fragrant.
- Toss in all the veggies and sauté until veggies soften, add the sauce, toss to coat, and cook for a couple more minutes, then spread over the zoodles in the casserole dish.
- Whisk the eggs and coconut milk, pour over the stir fry and zoodles, and bake until eggs are set and edges beginning to brown.
- Remove from oven, allow to cool, and garnish with Thai basil, sliced Thai peppers, toasted sesame seeds, cilantro, or green onions.

Ingredients
Ingredients for Stir Fry Sauce:
- 2 Tbsp fish sauce
- 2 Tbsp chili garlic sauce/paste (or sub with sriracha)
- 2–3 tablespoon gluten-free Tamari (see notes*)
- 1 Tbsp dark sugar – Coconut palm sugar, dark brown sugar, or molasses. Paleo option, use coconut sugar or molasses.
- Pinch of ground ginger or fresh grated ginger
- ¼ tsp kefir lime zest or regular lime (a splash of lime may be substituted)
- Salt and pepper to taste
- Optional – finely diced Thai bird’s eye red pepper for extra spicy (see notes*)
Other Ingredients for the casserole:
- 1 lb boneless skinless chicken thighs or breast (thin-sliced or diced)
- 2–3 tablespoon tapioca starch or cornstarch
- 16 oz (3-4 cups) Zucchini noodles. About 1-2 large zucchinis
- 1 cup chopped white or yellow onion
- 1 Tbsp olive oil or sesame oil
- 1 tsp minced garlic
- 1 red bell pepper, sliced
- 2–3 cups stir fry veggies of choice (shredded cabbage, sliced carrots, broccoli florets, snap peas, etc.)
- 3 eggs
- 2–3 tablespoon coconut milk
Optional Garnishes:
- Thai basil
- Sliced Thai red pepper (see notes*)
- Sesame seeds
- Cilantro
- Green onions
Instructions
- Preheat oven to 350°F. Grease a medium casserole dish and set aside.
- Dice or thinly slice chicken, pat dry with a paper towel, then toss in a bowl with cornstarch or tapioca starch. Set aside.
- Spiralize your zucchini. I used a spiralizer, but you can also cut julienne style. Spread your zucchini noodles on some paper towels to drain excess moisture for a few minutes while you prepare the sauce, then arrange them in the bottom of your prepared casserole dish.
- Prepare the sauce by whisking together the fish sauce, chili sauce, ginger, tamari, sugar, lime, and a pinch of pepper. Taste and adjust with more tamari or sugar if needed.
- Heat a large skillet over medium high. When the pan is hot, coat with oil, then add the chicken and cook until browned, about 5 minutes, flipping once or twice.
- Add your stir fry veggies, onions, and sliced red pepper and sauté for about 5 minutes, stirring occasionally, until vegetables are beginning to soften. Add the garlic and stir until fragrant, about 2 minutes.
- Add sauce, stir everything to coat, and continue to cook for another few minutes until sauce begins to simmer and thicken.
- Transfer the chicken stir fry on top of zoodles in the casserole dish and spread evenly.
- Whisk the eggs and coconut milk, then pour evenly over stir fry and zoodles, place the dish in oven, and bake 25-30 minutes or until the edges are golden brown and the egg mix is cooked through.
- Remove from oven and allow cool for 5-10 minutes before serving.
- Season to taste and garnish with Thai basil, optional sliced Thai peppers, toasted sesame seeds, cilantro, or green onions.
Notes
- To easily slice chicken: freeze for 30-45 minutes until the chicken is firm but not frozen solid. This allows a sharp knife to glide through the meat smoothly without pulling or tearing.
- For soy-free option use coconut Aminos in place of tamari sauce.
- If you don’t have Thai red pepper, you can use any other spicy red pepper. Thai red peppers are available in the Asian foods section or produce section of some supermarkets, or at some Asian markets.

Loved this so much! For some reason, it was liquidy after 30 minutes. I kept baking it but it it seemed to overcook things. I did add a lot of veggies but didn’t change anything else. I want to make this again so if there are any ideas (or maybe I was expecting it to firm up when it doesn’t)?
Hi Elena! Thanks for feedback! This is an older recipe we’re working on updating. My recommendation with two first bake the zoodles. Placed them on a baking sheet and put them in the oven at 3:50 for about 15 to 20 minutes to bake and dry out. That helps remove excess moisture. Does that make sense?

Pad Kee Mao is in my regular cooking rotation. Using Zoodles really appealed to me. However I found the stir fry sauce to be WAY too salty for me, glad I tasted it before adding to the dish. I used my pad kee mao sauce as a substitute, it has less dark soy sauce and the addition of oyster sauce. I followed the rest of the recipe as written and it was delicious.
The flavors in this recipe came together marvelously! I was a little skeptical about the taste of the sauce at first, but once everything baked…no more worries, just seconds and empty plates. I used frozen zoodles, veggies, and chicken breast. Everyone in the house enjoyed.

Do the zoodles get mixed with the stir fry veggies or do they go in the casserole dish without being “stir fried” with the other veggies first?

Hi. I’m baking my drunken noodles and have been tasting them along the way. It already tastes good. I was surprised at how much salt is in it though when I saw the nutritional facts. Is this safe to eat?? We want the antiinflamitory effects but were concerned about high blood pressure.
totally understand. You can reduce the salt or use reduced sodium tamari sauce. Or coconut aminos. Those will help reduce salt content.

I made this dish last night! I didn’t realize we had accidentally used the chicken for something else (poor chicken was double booked), so I had to make it with no meat. I’m so glad I did! This dish was delicious! I was skeptical the whole time I was making it to be honest. The fish sauce scared me ..”anchovy extract”, the coconut milk, the lack of cheese in a casserole… Etc. It was unique and delish! I will definitely make it again- with or without chicken. 🙂

You could try just adding a bit more starch. Do you have arrowroot or corn starch? can you handle dairy?

I think so, but I would not bake it beforehand. Just assemble, freeze, then bake before serving. Or you could bake it all and freeze, but the zoodles might get a little soggy once reheated. Let me know if you try it!
I have ventured into trying more Asian dishes and this one looks delicious and you make it look so easy. The colors are so vibrant and the ingredients healthy, that this is a perfect dinner that includes everything you need. Yum!

Can you make this without egg?
You could but it would really hold together. YOu could try using a chickpea pancake (socca) mix and add on top. I have chickpea pancake and socca recipes on my site. THoughts?
