Description
This salsa recipe is perfect for summer! Made with fresh peaches, sweet onion, and smoky chipotle peppers. It’s one sweet and spicy dip, perfect for topping grilled chicken, salmon, pork, or even tortilla chips!

- 1 cup peaches, diced
- 1/2 cup to 2/3 cup tomatoes (cherry or Roma), diced
- 1/4 cup finely diced red or sweet onion
- 1 tablespoon finely diced chipotle pepper in adobo, sauce included (can or jar)
- 1 tablespoon honey or maple syrup
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1/4 teaspoon kosher salt, plus more to taste
Instructions
- Place the peaches, onion, and tomatoes to a large non-reactive bowl, such as glass or stainless steel.
- Add the chipotle pepper in adobo, honey or maple syrup, cilantro, lime juice, and salt. Gently stir until well combined. Taste and adjust the salt as needed.
- Cover and refrigerate for at least 20-30 minutes before serving to allow the flavors to meld.
- Store leftover salsa in an airtight container in the refrigerator for up to 4 days.
Notes
Substitute – 1 fresh jalapeño (chopped) in place of adobo chipotle peppers.
